How to make the most of indigenous terroir systems?

The Pacific Islands offer a compelling lens through which we can understand terroir: The intersection of geography, climate, and human cultivation practices that give agricultural products their distinctive character. While often associated with European wine production, terroir finds unique expression across Pacific cultures where traditional farming systems maintain deep-rooted connections to land and people.

Pacific Islander cultures have developed agricultural knowledge systems that recognize the relationship between climatic growing conditions and food quality. Hawaiian terminology for coconut varieties illustrates this understanding: Terms like Niu Hiwa (dark coconut), Niu Polapola (coconut with large fruits) and Niu Lelo (yellow coconut) describe physical appearance but also cultivation methods, appropriate uses, and cultural significance. Uluniu (Hawaiian coconut groves) represent ancient systems tied to Hawaiian royalty, with varieties like Niu Hiwa reserved for ceremonial purposes.
This linguistic precision extends throughout the Pacific. The Polymotu concept (poly=many, motu=island) is derived from previous initiatives in the conservation of coconut palms by ancient Polynesians and some contemporary Thai people. It involves using the geographical isolation of special sites for conservation and reproduction of individual varieties of plants and trees. When life gives you limited land, you make the most of geographic isolation to preserve valuable genetic diversity.
The Pacific's distinctive climate factors - cyclones, changing rainfall patterns, saltwater intrusion - have forced crops to adapt. Traditional taro varieties have developed resistance to leaf blight in some islands and salt tolerance in others. Giant swamp taro (Cyrtosperma merkusii) thrives in atoll environments with limited freshwater to provide food security during environmental stress.

Meanwhile, ethnochemistry (the traditional understanding of chemical processes) informs key food preparation techniques. Traditional practices like nixtamalization, where corn is cooked with alkaline substances like wood ash, enhance nutritional content by increasing calcium and improving amino acid availability. In the Cundiboyacense region of Colombia, ethnochemistry plays a major role in traditional food processing like nixtamalization, cheese-making, and apiculture. These practices show how communities embed chemical knowledge in cultural practices without formal scientific training.

The nixtamalization process in the Andean region dates back to pre-Hispanic cultures like the Muisca, who inhabited the Colombian highlands around Bogotá. Similar chemical manipulation led to the production of fermented beverages from maize such as Masato, which held important ceremonial significance across many indigenous cultures of the Pacific.

From another angle, the dynamic relationship between human cultivation practices and natural climatic conditions defines the special character of a terroir. In the coconut groves of Kalaeloa, Oʻahu, researchers observed distinct patterns of varieties arranged in specific locations, which suggests intentional planting strategies to maintain genetic purity while allowing for genetic mutation across time.

Traditional farming methods contribute significantly to terroir characteristics. Colombia's Paipa cheese exemplifies this relationship between place and product quality. Produced in the high-altitude municipalities of Paipa and Sotaquirá just over 8,000 feet above mean sea level, this semi-matured cheese owes its distinctive character to the region's cold, humid climate with temperatures averaging 57°F and 76% humidity. The milk comes from cattle breeds like Normando, Holstein, and Jersey that graze on local vegetation. This diet gives the milk unique nutritional qualities including beneficial omega-3 fatty acids.

The Paipa cheese-making process combines indigenous knowledge with cows and farming techniques introduced during the colonial period. During maturation (21-28 days), complex biochemical reactions transform the cheese. Enzymes like lipases and proteases break down fats and proteins to create remarkable flavors. This process depends entirely on the local environmental conditions and creates a product that cannot be replicated elsewhere.

You can't put the genie back in the bottle when it comes to climate change impacts on Pacific terroir. Rising sea levels and saltwater intrusion into the freshwater lens cause particular damage to coastal agricultural systems. In the low-lying atolls of the Tuāmotu, Maite (traditional taro pits) face inundation from king tides, and human excavation, which threatens centuries-old cultivation practices and associated cultural knowledge.

Pacific farmers respond with innovative adaptation strategies. In places like Mungiki (Bellona), Solomon Islands, farmers revitalize traditional food systems in response to unreliable imported food supplies. Others select climate-resilient varieties through participatory breeding approaches that combine scientific methods with traditional knowledge of local growing conditions.

Traditional apiculture practices also demonstrate climate adaptation strategies. Indigenous communities throughout South America and the Pacific have long used honey and other bee products for both food and medicine.

Every cloud has a silver lining, and the growing recognition of the importance of a terroir may help preserve traditional agricultural systems. Community seed banks and in-situ conservation efforts maintain locally adapted varieties with their distinctive terroir characteristics. In Hawaiʻi, organizations like Niu Now work to document and preserve traditional coconut varieties.

Scientific approaches increasingly acknowledge the value of traditional knowledge systems. The innate understanding of local environmental conditions developed over generations provides insights that complement modern research methods. Participatory plant breeding approaches combine farmer expertise with scientific techniques and develop improved varieties that maintain traditional characteristics while they enhance climate resilience.
